"This Single Cask is from the 2009 harvest, distilled in 2010 and bottled in April 2021. The summer and fall of 2009 were ideal for apple and pear growing in Normandy with the beautiful sunshine and light rain allowing the fruits to grow in size, with a high sugar content. The eau-de-vie was aged in French oak barrels in our cellar and then for the last two years in old Pommeau barrels offering us notes of baked apples, sweet almonds and pudding."
